HILLSBURGH – Coming out of the “winter that didn’t happen” and into the cold this year, a new season for a Hillsburgh tree farm comes with much excitement.
Last year, February provided Elliott Tree Farm the historic start date, as warmer temperatures persisted. Derek Elliott of the farm explains this time around, it wasn’t until later that the ideal temperatures, a few degrees above freezing during the day and a few below at night, were spotted in the forecast.
Elliott says this is not unexpected, as this winter compared more to winters gone by.
A variety of syrups and a new event highlight this new season for Elliott Tree Farm.
The harvest season, Elliott reports, was a successful one with one main factor: consistency despite different weather patterns.
Elliott says this time of year is one to behold in the industry.
Elliott went on to explain at least 80 per cent of maple syrup is produced in Ontario.
Home to the Maple Syrup Museum of Ontario, his farm he says puts on the Sugarbush experience this year, a brand-new event.
At the beginning of the season, Elliott explains, syrup produced is golden, before darkening throughout the season.
